Cappuccino icebox cake
Your coffee fix and your chocolate fix in the same bite. No oven needed; it sets overnight in the fridge.

Method
- Beat the cream cheese, cream, cocoa, espresso powder and vanilla on medium-high until soft peaks form. Gradually beat in the sugar until stiff peaks form.
- Line the bottom and sides of the loaf pan with biscuits.
- Spread in half the cream mixture, then add a double layer of biscuits. Repeat with the rest of the cream and another double layer of biscuits.
- Cover with cling film and refrigerate overnight.
- Turn the cake out onto a long platter, drizzle with the melted Pascall Dark Chocolate and serve. It keeps, covered in the fridge, for up to 2 days.
